Made with select cuts of pork and seasoned with liver, garlic, and spices, this sausage embodies the bold, rustic flavours of Corsican mountain fare. Smoked over chestnut wood and aged to perfection, Figatellu offers a robust, earthy aroma and a deep, savoury taste with subtle gamey notes.
Figatelli are almost always consumed grilled: the most popular method is to grill them over an open wood fire or embers. The high fat and liver content drips onto the fire, causing it to flame up and char the outside while leaving the inside rich and tender.
