Originating from the wild, rugged limestone plateau of the Larzac in southern France, the Pavé du Larzac is a farmhouse cheese that embodies the pastoral traditions of the Occitanie region. Crafted from the rich, raw milk of Lacaune sheep that graze on the diverse, aromatic flora of the “causses”, this cheese carries the distinct, sun-drenched character of its terroir.

This firm, pressed cheese has a natural, rustic rind and a dense, compact paste. It offers a robust, savoury flavour with pronounced notes of toasted nuts, dried herbs, and a pleasant, lingering sweetness, reflecting the sheep’s diet of wild thyme and juniper.

Excellent on a cheese board, it pairs beautifully with a full-bodied red wine from the Languedoc, such as a Faugères or Saint-Chinian. It also grates superbly over gratins, salads, or pasta, adding a deep, savoury complexity.

Storage: Keep refrigerated, wrapped in wax paper or in a breathable container. Its flavor will continue to develop over several weeks.
