These Fines de Claire N°3 oysters are a taste of the Atlantic. The flesh is plump, firm, and briny , with a clean, crisp snap. Their flavour opens with a bold sea spray, then mellows into a sweet, nutty finish with hints of iodine and green algae. Balanced, never aggressive.

Grown in the famed Marennes-Oléron basin, these oysters undergo a special “refinement” in shallow clay ponds called claires. This process gives them their pale green gills and delicate, slightly hazelnut taste. N°3 indicates a medium size—perfect for newcomers and connoisseurs alike, offering generous meat without overwhelming brine.

Serve chilled on crushed ice with lemon wedges and a shallot mignonette . Pair with a crisp Muscadet or dry Champagne. For a classic feast, add rye bread and salted butter. Avoid heavy sauces; just a drop of Tabasco or a squeeze of lemon. Shuck just before serving and eat raw, in one luxurious slurp.
