The Fine de Claire Oysters come from the Marennes-Oléron basin on the French Atlantic coast.
These oysters are finished for several weeks in shallow clay ponds, where they develop a superior-quality shell compared to oysters grown in the open sea. It is during this process that the claires from Marennes impart subtle regional flavours.
This oyster is high in water content and balanced in taste, making it ideal for those who prefer less fleshy oysters.

Classic pairings are usually Muscadet, Chablis and Champagne.
