The “Fermier” designation guarantees the highest level of authenticity: crafted exclusively on family farms using raw milk from three local breeds—Manech Tête Noire, Manech Tête Rousse, and Basco-Béarnaise—that graze freely on the region’s wild, flowering pastures .
The result is a cheese of remarkable balance and complexity: a smooth, firm yet creamy texture beneath a natural rind that ranges from yellow-orange to gray, with notes of toasted hazelnut, sweet butter, and wildflowers unfolding on the palate . Traditionally savored with black cherry jam or quince paste—a classic Basque pairing—it shines equally on a rustic cheese board or grated over gratins.
