Originating from Bologna, Italy, mortadella has PGI protection and centuries of history. Maison Duculty sources this version from small Emilia-Romagna producers who grind pork shoulder and belly into a smooth paste, then steam-bake the giant sausages. Whole Sicilian pistachios are folded in before cooking, then the mortadella is thinly sliced to showcase its pink-hued, ivory-flecked beauty.
Pair with Lambrusco secco, dry Prosecco, or a chilled Bardolino. Serve at 12–14°C on soft focaccia, crusty baguette, or crackers. Also try with cornichons, pickled peppers, or mozzarella pearls.
