Honey, Spring Maquis

Honey, Summer Maquis – PDO Miel de Corse is produced in the high-altitude Niolu region of Corsica, where beekeeping follows traditional practices passed down through generations. The area’s rich maquis vegetation and minimal human impact make it an ideal environment for producing a honey that reflects the island’s wild, botanical character.

Harvested in spring, this light amber honey is smooth and fluid, with floral sweetness and layered notes of asphodel, broom, and heather. Subtle undertones of caramel and dried herbs add depth without overwhelming its delicate aromatic profile.

Pair with Patrimoniu AOP, Domaine Montemagni, Vermentinu. Its bright acidity and subtle herbal finish mirror the honey’s floral complexity, creating a clean, harmonious balance on the palate.
