Sourced primarily from the nectar of chestnut blossoms in the Patrimonio area, this honey is deeply rooted in Corsican tradition.
It stands out for its dark amber hue, dense texture, and bold, slightly bitter flavour. Notes of wood, tannin, and dried herbs lend it a complex aromatic profile, making it a rare and expressive product. This honey is unfiltered and raw, preserving its natural properties and the full intensity of its terroir.
Pair with Pecorino, aged Tomme, or Bleu des Causses. Its bitterness and depth complement the richness of mature cheeses and enhance savoury or roasted preparations.
