Crafted by renowned Swiss cheesemaker Willi Schmid in the Toggenburg region, Holzige Geiss is an artisanal raw goat’s milk cheese where mold develops naturally, yielding a strong identity, intense aromas, and rich flavor. Available for the very first time in Hong Kong in very limited quantities, this exclusive creation is wrapped in a band of local spruce bark. As it matures, the bark imparts delicate woodland aromas that complement the natural character of the milk, creating a cheese that is both rustic and elegant.
Beneath its rustic exterior lies a soft, creamy paste with a remarkable balance of freshness and complexity. Bright notes of goat’s milk mingle with hints of forest herbs, wood, and gentle earthy nuances, leading to a long intense and harmonious finish.
Best enjoyed at room temperature, Holzige Geiss pairs beautifully with fresh berries, wildflower honey, crusty bread, and sparkling wines or dry ciders.
