Cheese Type: Uncooked, unpressed soft cheese with a natural rind.
Made by the Fromagerie du Petit Jabron in Provence, this flat eight-sided farmhouse raw goat milk cheese is engraved with a Cathar cross onto its rind. The cheese is rubbed with a typical Provençal mix of Olive oil, Paprika, and Marc de Provence three times a week during its maturation period, giving it its light orange rind underneath the white natural flower that develops.
Its fudgy paste reveals a fresh and delicate caprine flavour. Perfect for goat cheese beginners, Galette des Templiers is a nice uncommon and tasty addition to your cheese platter.
