The 2015 Cuvée Eximia delivers toasted brioche, dried fig, roasted hazelnut, and honeyed lemon. Nearly a decade on lees gives fine, persistent mousse and a taut, oxidative finish—low dosage, late-disgorged, built from Grand Cru Pinot Noir and Chardonnay.
Mater & Filii is a grower-producer crafting vintage-dated, terroir-driven Champagne. The warm 2015 vintage adds plush fruit beneath the age, while extended lees aging brings nutty, umami complexity without oak. A vinous Champagne for serious palates.
Pair with truffled rotisserie chicken, five-year Comté, seared scallops with brown butter, or mushroom risotto. For a twist, try popcorn with truffle oil. Decant briefly, serve at 10–12°C in a white wine glass.
