First produced by the Bianchini Family in the Apulia region in the 1920s, Burratina is prepared like Mozzarella. The key difference is that its white, creamy filling contains pieces of cream called stracciatella.

Soft, creamy, and delicate, Burratina is perfect to enjoy as an appetizer. You may wonder what the difference is between Burrata and Burratina—the only difference is size. As the name suggests in Italian, “burratina” refers to a smaller version of Burrata.

If you are planning a three-course meal, Burratina served with fresh tomatoes and a drizzle of olive oil makes a lovely appetizer.
