Corsican is a harmonious blend of Italian and French. The word “Salsiccia” in Corsican meaning “Sausage” is an Italian word and was adopted by Corsican natives. Using traditional recipes and natural curing methods, Semidei preserves the authentic flavours of Corsican mountain game.
This sausage delivers a rich, intense flavour with earthy, slightly gamey notes balanced by aromatic herbs and spices. Its firm texture and smoky undertones make it a distinctive specialty reflecting the island’s wild heritage.
