Beef Whole Tenderloin, Angus King Island Grass-fed (Chilled)

This exquisite Beef Whole Tenderloin is sourced from grass-fed Angus cattle raised on the pristine pastures of King Island. Renowned for its exceptionally tender and lean texture, this is the most delicate cut of beef, offering a subtle, buttery flavour that is both refined and satisfying. It is raised without antibiotics or hormones and delivered to us chilled to ensure optimal quality.

Cooking Instructions:

1. Remove the tenderloin from refrigeration and let it rest at room temperature for 45-60 minutes before cooking.
2. Preheat your oven to 200°C.
3. Pat the meat dry and season generously with salt and pepper.
4. Sear the tenderloin on all sides in a hot, oiled oven-proof skillet until a rich, brown crust forms.
5. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 50-52°C for rare or 55-57°C for medium-rare.
6. Let the tenderloin rest for 10-15 minutes before carving into thick, elegant medallions.
