Sourced from young, grass-fed Angus cattle raised on the windswept pastures of King Island, north of Tasmania, it delivers a clean and potent taste. This premium beef is antibiotic and hormone-free and arrives chilled, hand-cut to ensure maximum freshness and quality.

Cooking Instructions:

• Bring steak to room temperature about 30-45 minutes before cooking.
• Preheat a heavy skillet or grill pan over high heat until very hot.
• Lightly oil and season the steak generously with salt and pepper.
• Sear for 3-4 minutes per side until a deep brown crust forms.
• Cook to an internal temperature of 52-54° for medium-rare.
• Let rest, loosely covered with foil, for 5-10 minutes before serving.
• Optionally, baste with butter and aromatics during the last minute of cooking for extra flavour.
