Bavette, the butcher’s favourite, is known for its deep flavour and tender texture. Each pack includes two 300g Angus flank steaks – ideal for a quick sear that locks in juicy, pink perfection. The sauce captures the taste of the Midi-Pyrénées region with bold Roquefort La Cave, fresh Isigny cream, organic French shallots and Baechler churned butter.

What’s Inside the Pack:

• Beef Flank / Bavette Steak, Angus Tender Valley (Chilled), 300g x2
• Roquefort La Cave (Wedge) – Maison Coulet, 100g
• Cream Isigny (Fresh), 200g
• Churned Butter (Unsalted) – Baechler, 250g
• Shallot, Long from France (Organic), 250g

Recipe

1. Season the bavette with salt and pepper, then sear in a hot pan with butter for 2–3 minutes per side. Rest the meat.
2. In the same pan, sauté finely chopped shallots until soft.
3. Deglaze with a splash of cream and let it reduce gently.
4. Add crumbled Roquefort and stir until smooth and creamy.
5. Slice the bavette against the grain and spoon the sauce on top
6. Serving Tips: Enjoy with aligot, truffade, crispy frites and / or a fresh green salad.
