Wookey Hole Farmhouse Cheddar Truckle

Ford Farm’s Cave Aged Cheddars originate in Dorset, where they are handcrafted using local milk from herds grazing on Ashley Chase Estate’s pastures. These cheddars are meticulously prepared by hand, then matured 200 feet underground in the Wookey Hole Caves, where they absorb distinctive earthy and nutty flavours from the cave’s atmosphere due to their porous nature.

The cheese is firm and cream-coloured with a complex aroma of sweetness, creaminess, farminess, and earthiness. Its robust, well-rounded flavours combine sweet and salty, earthy and tangy notes, enhanced by the distinctive earthy and nutty flavour from the Caves.

The strong, sweet, and nutty undertones of Wookey Hole Cave-aged Cheddar pair wonderpiecey with piece-bodied red wines that have a bold flavour.
