The 2019 Chiroubles “Climax” from Château de Javernand delivers crushed raspberry, wild strawberry, violet petals, and a hint of white pepper. This 100% Gamay offers silky, fine-grained tannins and bright, mouthwatering acidity—lighter than Moulin-à -Vent but more structured than regular Beaujolais. The finish is mineral-driven and floral, with no oak influence—pure, granite-grown fruit.
Chirouches is the highest-altitude cru of Beaujolais (300–450 meters), known for producing elegant, perfumed wines. Château de Javernand, a historic estate in Romanèche-Thorins, farms old vines on pink granite and sand. The warm 2019 vintage brought concentrated fruit without losing Chiroubles’s signature lightness and lift. A cru Beaujolais that drinks beautifully young but can age 3–5 years.
Pair with roasted turkey with herbs, duck breast with cherry sauce, or mushroom quiche. Also try with salmon en croûte, pork tenderloin, or charcuterie board. Serve at 14–16°C—slightly chilled. A springtime red for Easter lamb, picnic pâté, or simply chilled for summer sipping. Elegant, floral, and dangerously drinkable.
