The 2022 base vintage delivers crushed yellow apple, brioche, and a striking note of fresh almond. Unlike sharp, lean Champagnes, this one offers generous texture and a salty, chalky persistence—zero malolactic fermentation keeps the tension high.
Pair with fried chicken or soft-ripened cheese. That bready richness and zesty cut make it magical alongside crispy onion rings, oyster po’ boys, or Époisses (the creamy, stinky Burgundian classic). For seafood, skip raw oysters and try grilled langoustines or taramasalata with warm pita—the bubbles scrub away every bit of richness.
Go unexpectedly spicy. The BB Signature’s ripe fruit and mouth-coating mousse tame Korean fried cauliflower, Sichuan wontons, or even butter chicken.
