In the 19th century in Dauphiné, ravioleuses went house-to-house on celebration days offering square ravioli stuffed with cheese. One, Mother Maury, added them to her café menu—j success was instant, making Raviole du Dauphiné legendary.

The recipe remains unchanged: very fine dough from soft wheat flour with a creamy Comté AOP filling, delivering delicious savoury flavour.

Serve in a light broth or with simple sauce for comforting meals.

How to eat?

Eat as a main or as a side. Very easy to prepare, add them in simmering water and wait for 1 minute. Can be frozen for longer preservation.
