This semi-hard, pressed sheep’s milk cheese from the French Basque Country delivers nutty, sweet, and slightly salty flavors. The texture is dense yet creamy with notes of brown butter, roasted hazelnut, and grass-fed milk. As it ages (60–90 days), a natural grey-brown rind develops, while the paste turns ivory with tiny tyrosine crystals—a hallmark of long aging.
Ossau-Iraty is one of only two AOC-protected sheep’s cheeses in France (alongside Roquefort), crafted by Basque and Béarnais shepherds for over 3,000 years. Made from Manech and Basco-Béarnaise sheep milk, it is unpressed and uncooked, then aged on hemp or spruce planks. A pastoral treasure of the Pyrenees.
Pair with Jurançon Sec (dry) or a bold Tannat—the wine’s herbal, mineral edge cuts the cheese’s richness. Serve at 16–18°C alongside black cherry jam, quince paste, or air-dried ham. Also try with dark cherry and walnut bread. A perfect melting cheese for croque monsieur or gratin. Essential for any Basque-inspired cheese board.
