This historic organic house champions biodynamic farming and lasting relationships with family farms across France.
The long green zucchini, a summer staple in French kitchens, travelled from the Americas to Europe and was perfected in Mediterranean regions, becoming an emblem of Provençal cuisine. Its taste is delicate, tender, and subtly sweet, with a crisp texture when raw and a soft, creamy bite when cooked. The flavour is mild and slightly nutty, easily absorbing the aromas of garlic, olive oil, and herbs.
Enjoy it raw in salads with a light vinaigrette, gently sautéed with garlic and thyme, or roasted to bring out its natural sweetness and caramelised edges. For a perfect pairing, a crisp Sauvignon Blanc or a light, refreshing rosé from Provence complements its subtle flavour beautifully, while a dry white wine like Muscadet also works wonderfully.
