Saint-Guilhem-Le-Désert IGP, Domaine Capion Rouge (Organic) 2022

Domaine Capion is located just outside the historic village of Aniane, in the heart of the Gassac valley near Saint-Guilhem-le-Désert—a UNESCO World Heritage site known for its ancient abbey and dramatic limestone cliffs. The region’s winemaking roots run deep, but it was in the late 20th century that estates like Capion began drawing attention for high-quality, terroir-driven wines. Undergoing a full organic conversion in recent years, the domaine has focused increasingly on precision in both vineyard and cellar. The Saint-Guilhem-le-Désert IGP allows for more freedom in grape variety selection, giving producers like Capion room to experiment and craft expressive, characterful whites.

This white is a blend of Viognier, Roussanne, and Clairette. Pale gold in the glass, it opens with aromas of white peach, honeysuckle, and a touch of citrus zest. On the palate, it’s round and textured with notes of apricot, pear, and a faint almond-like finish. There’s a pleasant freshness running through it, lifted by gentle acidity and a slightly creamy mouthfeel. The texture is smooth and mouth-coating without being heavy, and the finish leaves a light floral echo.

Serve this with a piece of Saint-Nectaire. Its washed rind gives a gentle earthiness and creamy texture that works beautifully with the wine’s stone fruit notes and subtle floral lift. The cheese’s richness rounds out the wine’s freshness, creating a smooth and comforting balance.
