A centrepiece for a special occasion, these Prime Ribs showcase the quality of King Island’s grass-fed Angus. Well-marbled and full-bodied, they become exceptionally tender and flavourful with slow, gentle roasting. This product is sourced from ethical farms, is antibiotic and hormone-free, and is delivered chilled.

Cooking Instructions:

  • Remove prime ribs from the fridge and let come to room temperature for 1-2 hours.
  • Preheat oven to 120-130°.
  • Season ribs generously with salt, pepper, and your choice of herbs or spices.
  • Roast slowly for 3-4 hours, until internal temperature reaches 55-57° for medium-rare.
  • Increase oven temperature to 220° and roast for an additional 10-15 minutes to crisp the outer crust.
  • Rest the meat covered loosely with foil for 15-20 minutes before carving.
