Handcrafted in Corsica by the Don Simoni family, the Petit Brebis Artisanal is a traditional sheep’s milk cheese made with care and precision. Don Simoni has preserved regional cheesemaking techniques passed down through generations, working exclusively with raw milk from local flocks grazing on maquis-covered hillsides.
This small-format cheese has a soft, creamy paste with a bloomy, white rind. Its flavour is mild yet expressive, combining grassy notes with a light tang and a subtly earthy finish. As it matures, the texture softens, and its taste deepens—perfect for enjoying at various stages of ripeness.
Pair it with the Patrimoniu AOP, Domaine Montemagni, Menhir Blanc. The wine’s freshness and aromatic lift beautifully complement the cheese’s delicate character, enhancing its creaminess while echoing the natural herbs of the Corsican landscape.
