Originating from the volcanic island of São Jorge in the Azores, São Jorge DOP is a cheese with over five centuries of tradition. Introduced by Flemish settlers in the 15th century, this raw cow’s milk cheese has been shaped by the island’s lush pastures and oceanic climate. Today, it remains a staple of Azorean gastronomy, protected by Denominação de Origem Protegida (DOP) status.

Aged for seven months, São Jorge DOP develops a firm, slightly crumbly texture with a rich golden hue. On the nose, it offers a bold aroma of aged dairy and buttery sweetness, while on the palate, it delivers an intense, slightly lingering spicy. The balance of salt and acidity makes each bite irresistibly moreish.

For the perfect pairing, enjoy this cheese with a glass of robust Douro red wine or a fortified Madeira. Complement its bold character with cured meats like Iberico chorizo or a drizzle of artisanal Azorean honey.
