The creamery producing Funky Monk is the same that produced the fabulous Gouda requested by Nasa astronaut Shannon Wallker during her time on the International Space Station. At its head since 1987, Johan Deweer, the third generation of his family to be managing the farm, was trained in the cheese making arts in New Zealand and in Normandy. Johan and his family’s cheeses have won many awards throughout the years are renowmed worldwide.

Funky Monk, a two kilogram washed-rind wheel of cheese, uses cow’s milk from the Deweer family’s own herd. Unlike other rind-washed cheeses like Époisses or Maroilles, Funky Monk’s smell is subdued. Its character is one the inside. The cheese’s yellow rind is semi hard. By contrast with its interior which is pudgy, supple and has a rich buttery colour. Funky Monk is dense but nevertheless creamy.

For a harmonious tasting, consider pairing Funky Monk with a bottle of Abbaye de Forest, a tasty and fruity beer from the Brussels region.
